INGRIDIENTS

1.1 cup basmati chawal
2.1 cup hari matar
3.1 madhyam size pyaaz, patle tukde me kata hua
4.2 hari mirch, lambi tukde me kati hui
5.1 madhyam size tamatar, kaate huye
6.1 inch adrak ka tukda, grate kiya hua
7.2-3 lahsun ke kali, chote tukde me kata hua
8.2 tablespoon ghee (clarified butter) ya tel
9.1 teaspoon jeera
10.2-3 garam masale (jaise tej patta, dalchini ki lakdi, laung)
11.1/2 teaspoon haldi powder
12.1/2 teaspoon lal mirch powder (optional, swad anusar istemal kare)
13.Namak swad anusar
14.Hare dhaniye ke patte, sajane ke liye kata hua

Making of Matar Pulao recipe in Hindi (Vidhi Matar Pulao Banane ki)

1.Chawal ko dhakkan ke neeche tak saaf pani se dho len. Chawal ko 30 minute tak pani me bhigo den, fir use chaan kar alag rakh den.
2.Ek pressure cooker ya gehri bartan me ghee ya tel ko darmiyani aanch par garam kare.
3.Garam ghee/ tel me jeera aur garam masale (tej patta, dalchini ki lakdi, laung) dal kar ek minute tak bhune, jab tak unka sugandh aaye.
4.Pyaaz ke tukde ko ghee/tel me dal kar sunahra hone tak pakaye.
5.Grate kiya hua adrak aur kata hua lahsun dal kar ek minute tak bhune, jab tak lahsun ka kacha swad khatam na ho jaye.
6.Tamatar aur hari mirch ko dal kar pakaye, jab tak tamatar naram aur masala ban jaye.
7.Haldi powder, lal mirch powder (agar istemal kar rahe hai) aur namak dalen. Achi tarah mix kare.
8.Matar ko masalo ke sath milaye aur kuch minute tak pakaye.
9.Bhigoye hue chawal ko chaan kar cooker/ bartan me dalen. Halki halki chalni se masalo se chawal ko achhe se mix kare.
10.Cooker/ bartan me 2 cup pani dale aur dhakan band kare. Agar cooker istemal kar rahe hai, toh medium aanch par 2 seetiyan bajaye. Agar bartan istemal kar rahe hai, toh tight fitting dhakan se dhak kar halki aanch par pakaye, jab tak chawal pak jaye aur pani absorb ho jaye (lagbhag 15-20 minute tak).
11.Chawal pak jane ke bad, halki halki se fork se mix kare. Hare dhaniye ke patte se sajaye.
12.Garam garam matar pulao ko raita ya pasand ki kisi curry ke sath serve kare.
