Laal Maas, ek prasiddh Rajasthani dish hai, jo apne samriddh swaad aur teekhe masalon se jubaan chhidak deti hai. Ye pramukh dish Rajasthan ki shaanedaari se gehra juda hua hai aur Rajasthani bhojan ke ek paryaayak pratik hai.
Laal Maas ka arth hai “Lal Maas” aur iska naam sachmuch iske jeebh par bhadakne wale rang aur teekhe swaad ke liye mashhoor hai. Ye dish mukhya roop se golee huye mutton ko dikhaata hai, jo dhiraj se paka kar utkrisht hone wale masalon aur mirch ke mishran ke saath taiyaar kiya jata hai.
Laal Maas ko alag banane wala tatva hai lal mirch powder ka vistrut prayog. Rajasthan ke mirch, jo Mathania ya Kashmiri mirch ke naam se mashhoor hai, is dish ko uski pehchaan dar lal rang deta hai bina zyada garami ke. Laal Maas banane ke liye, ek bada kadhai ya pressure cooker mein ghee garam kiya jata hai aur jeera aur saunf jaise poore masale dale jaate hain, jisse unki sugandhit sugandh aati hai. Sukhi lal mirch iske baad dali jaati hai, teekhe swaad ko badhane ke liye. Kata hua pyaaz ko tab tak bhun liya jata hai, jab tak woh sunahri brown na ho jaaye, uske baad adrak-lehsun ka paste daala jaata hai, jo dish ko ek teekhi aur mitti ki sugandh deta hai.
Marinate kiye gaye mutton ke tukde iske baad kadhai mein dale jaate hain, jisse woh mutton ka ras aur gehra brown rang banane ke liye sek jate hain. Masala ka mishran mutton par chirak diya jata hai, taki har tukda masalon se acche se lapet jaye. Tamatar is dish mein daale jaate hain, jo teekhe swaad ko samanya karte hain aur lal mirch ki garmi ko santulit karne mein madad karte hain.

Ek bade pan ya pressure cooker mein ghee garam karein. Usmein jeera aur saunf daal kar use crackle hone dein. |
Sukhi lal mirch daal kar kuch seconds tak bhunein. |
Kata hua pyaaz daal kar use golden brown hone tak bhunein. |
Adrak-lehsun ka paste daal kar kuch minute tak bhunein, jab tak raw smell naa jaye. |
Mutton ke tukde pan mein daalein aur aanch tez kar dein, jab tak woh saare taraf se brown na ho jayein. |
Aanch ko medium par rakhein aur lal mirch powder, dhaniya powder, haldi powder aur namak daal kar acche se milayein, taaki masala mutton ke tukdon par acche se chipak jaye. |
Tamatar ka paste daalein aur 2-3 minute tak pakayein, thoda thoda hilate rahein. |
Agar pressure cooker istemaal kar rahein hain, toh 1 cup paani daalein, dhakkan band kar dein aur 4-5 seetiyaan bajayein ya jab tak mutton naram na ho jaye. Agar pan istemaal kar rahein hain, toh 1 cup paani daalein, dhakkan se dhak dein aur halki aanch par 1-2 ghante tak pakayein, jab tak mutton naram aur gala na ho jaye. Thoda thoda samay par check karte rahein aur chipakna naa hone dein. |
Jab mutton pak jaye, garam masala daal kar acche se milayein. |
Taaza dhaniya patti se sajayein. |
Garam-garam roti ya chawal ke saath serve karein. |
Laal Maas ka mazeedhaar aur teekha swad lijiye! |
Note: Apne swaad anusaar lal mirch powder ki matra ko badal sakte hain, kyun ki Laal Maas ko uski teekhi swad ke liye jana jata hai. |

Agar aap pressure cooker istemaal kar rahe hain, toh mutton ko dabane tak pakaaya jaata hai, jisse masale mutton mein acche se ghul jaate hain. Traditional kadhai mein ye dish ghante tak dhimi aanch par pakaayi jaati hai, jisse mutton apne ras mein dhire-dhire ubalte rahte hain aur masalon ka swaad poori tarah nikhar aata hai.
Ant mein, ye ek laajawaab aur sugandhit curry hoti hai jismein mutton ka tukda aisa hai jaise muh mein pighal jaaye.
