Kachori ke liye Samagri:
2 cup maida (all-purpose flour)
1/4 cup sooji (semolina)
1/4 cup tel (oil)
1/2 teaspoon namak (salt)
Pani (water) as required
Kachori ki Stuffing ke liye:
1 cup moong dal (yellow lentils), soaked for 2-3 hours
2 tablespoon tel (oil)
1 teaspoon rai (mustard seeds)
1/2 teaspoon jeera (cumin seeds)
1/2 teaspoon saunf (fennel seeds)
1/2 teaspoon hing (asafoetida)
1 inch adrak (ginger), grated
2 hari mirch (green chilies), finely chopped
1 teaspoon lal mirch (red chili powder)
1/2 teaspoon haldi (turmeric powder)
1 teaspoon dhania (coriander) powder
1/2 teaspoon amchur (dry mango powder)
1/2 teaspoon garam masala
Namak swaad anusar

Making of Kachori recipe in Hindi (Vidhi Kachori Banane ki)

Ek bade bartan mein maida, sooji, tel aur namak ko achhe se mix karein.
Thoda thoda karke pani daal kar, sakht aur aata jaisa guthne wala goondh lein.
Aate ko dhak kar 15-20 minutes ke liye rakh dein.
Ek kadai mein tel garam karein aur isme rai, jeera, saunf, hing, adrak aur hari mirch daalein. Halki aanch par saare masale bhun lein.
Ab soaked moong dal ko achhe se chhan kar kadai mein daal dein.
Lal mirch, haldi, dhania powder, amchur, garam masala aur namak daal kar saare masale mix karein.
Dal ko dhire-dhire pakne tak paka lein aur thanda hone dein.
Ab aate ko chhote chhote tukdon mein baantein aur har tukde ko belan se bel lein.
Beli hui aate ke beech mein stuffing rakhein aur aate ko band karke gol shape de dein.
Isi tarah saare kachori tayyar karein.
Ek kadai mein tel garam karein aur kachoriyan ek baar mein 3-4 piece daalkar, dhire-dhire sune hony tak deep fry karein.
Kachoriyan golden brown ho jayein toh nikal kar tissue paper par rakh dein.
Taaza dhaniya patti se sajayein aur garam garam kachori ko serve karein.
