Aate ke liye:
1 cup maida
2 tablespoon besan
1/2 chammach haldi powder
1/2 chammach baking powder
1 cup paani
Kuch strands kesar (optional)
Tel talne ke liye
Chashni ke liye:
1 cup cheeni
1/2 cup paani
Kuch strands kesar
1/2 chammach elaichi powder
1 chammach nimbu ka ras

Ek bowl mein maida, besan, haldi powder aur baking powder ko achhe se milayein.
Thode thode paani ko sukhre samagri mein daal kar smooth aata bana lein. Aata chip chipa nahi hona chahiye. Agar chahen toh kuch strands kesar ko paani mein bhigo kar aate mein mila sakte hain. Aate ko 30 minute tak rest karne dein.
Tab tak, chashni taiyar kar lein. Ek saucepan mein cheeni aur paani daal dein. Dheemi aanch par cheeni ko puri tarah gholne tak garam karein.
Chashni mein kesar strands aur elaichi powder daalein. Kuch minute tak chashni ko ubalne dein, jab tak thodi gaadha na ho jaye. Chashni mein nimbu ka ras milayein, taaki cheeni kristal nahi banaye.
Ek kadhai mein tel garam karein.
Jalebi aate ko squeeze bottle ya piping bag mein daalein. Nozzle ki opening chhoti honi chahiye, taaki patle jalebi ke dhaage ban sakein.
Garam tel mein aate ko ghumate huye jalebi ke shape bana lein. Centre se shuru karein aur ghumate huye gol gol banayein.
Jalebi ko sunehre aur crispy hone tak tal lein. Jalebi ko chammach ki madad se tel se nikal kar, excess tel nikalein.
Tal hui jalebi ko garam chashni mein daalein. 2-3 minute tak bhigoyein, taaki chashni ache se jalebi mein sama jaye.
Jalebi ko chashni se nikalein aur ek serving plate mein rakhein. Chopped pistachios ya almonds se sajayein, agar chahen toh.
Garam ya thanda, jalebi ko serve karein aur iski crispy aur mithe swad ka anand lijiye!
