Dal ko acche se dho kar 30 minute ke liye pani mein bhigo dein.
Dal ko paryapt pani ke saath pressure cooker mein ubaal lein, jab tak dal naram aur achhe se paki na ho jaye.
Ek kadhai mein ghee garam karein aur jeera dalein. Jeera phulne tak pakayein.
Hing, katayi hui pyaaz aur hari mirch dalein. Pyaaz sunehre rang ki ho jaye tak bhunein.
Adrak-lehsun ka paste dalein aur ek minute tak bhunein.
Kata hua tamatar, haldi powder, lal mirch powder, aur namak dalein. Tamatar naram aur achhe se pake tak pakayein.
Paki hui dal ko halka masal dekar kadhai mein daal dein aur achhe se milayein. Kuch minute tak halki aanch par pakayein.
Taze dhaniya pattiyan se sajayein aur dal ko alag rakh dein.
BATI
Ek bartan mein gehu ka atta, semolina, ajwain, namak, aur ghee ko achhe se milayein.
Haath se acche se milakar keeme jaisa texture banayein.
Thoda-thoda pani dalte hue sakht aata gondhein.
Aata ko chote barabar sized purye jaise gol tukdon mein baantein.
Oven ko 180°C (350°F) par preheat karein.
Bati tukde ko grease kiye hue baking tray par rakh dein aur 30-35 minute ya jab tak bati sunehri aur pak jayein, bake karein.
Oven se bahar nikalein aur bati ko alag rakh dein.
CHURMA
Ek kadhai mein ghee garam karein aur gehu ka atta dalein.
Halki aanch par atta ko sunehra hone aur khushbu aane tak bhunein.
Aanch se hatakar thoda thanda hone dein.
Powdered gur aur elaichi powder dalein aur acche se milayein.
Mixture ko puri tarah thanda hone dein.
Thanda hone par haath se mixture ko kankad jaise texture mein masal dein.
Katayi hui nuts se sajayein aur churma ko alag rakh dein.
Dal Bati Churma ko serve karne ke liye:
Tayaar ki hui dal ko batiyo par dal kar ek serving bowl mein rakhein.
Upar se thoda ghee aur taaza dhaniya patti se sajayein.
Garam-garam serve karein aur churma ko side mein rakhein.
