- 2 Cups Heavy cream
- 5 Large Egg yolks
- 1/2 Cup Granulated sugar
- 1 Tsp Vanilla extract
- 4-6 Tbsp Granulated sugar (for caramelizing)
Instructions
- Preheat oven to 325°F (160°C).
- In a saucepan, heat the heavy cream until it starts simmering. Remove from heat and set aside.
- In a mixing bowl, whisk the egg yolks and sugar until well combined and slightly thickened.
- Slowly pour the heated cream into the egg mixture while whisking continuously.
- Stir in the vanilla extract.
- Strain the mixture through a fine-mesh sieve to remove any lumps.
- Divide the mixture among ramekins placed in a baking dish.
- Pour hot water into the baking dish, about halfway up the sides of the ramekins.
- Bake for 30-35 minutes until the edges are set but the center still jiggles slightly.
- Remove from oven and let the ramekins cool in the water bath.
- Refrigerate for at least 2 hours or until completely chilled.
- Prior to serving, sprinkle a thin, even layer of granulated sugar over the custard.
- Using a kitchen torch or under a broiler, caramelize the sugar until golden and crisp.
