  • 1 can of corn kernels (about 15 ounces), drained
  • 1 can of black beans (about 15 ounces), rinsed and drained
  • 1 bell pepper (any color), diced
  • 1 small red onion, finely chopped
  • 1 tomato, diced
  • Juice of 1 lime
  • 2 tablespoons of olive oil
  • Salt and pepper to taste

  • First of all Drain the Corns and Black beans under cold water, and then put them both in a large bowl
  • Now, chop the bell pepper, red onion, tomato. Add these ingredients with corn and beans.
  • Now take a separate small bowl, add lime juice, olive oil, salt, and pepper. Adjust the amount of lime juice, salt, and pepper according to your taste preferences.
  • Add the mixture of above mentioned lime juice, olive oil, salt and pepper in the same bowl with vegetables and toss everthing to mix all together
  • Now, let the salad be cold in the refrigerator for at least 30 minutes to allow the flavors to mix together.
  • Once the Salad is Chilled you can serve as a side dish.
