4 chhote se madhyam size ke baingan (eggplants)
2 tablespoon tel (oil)
1 teaspoon jeera (cumin seeds)
1 medium size pyaaz (onion), barik kata hua (finely chopped)
2 teaspoon adrak-lehsun paste (ginger-garlic paste)
2 medium size tamatar (tomatoes), barik kata hua (finely chopped)
1 teaspoon haldi powder (turmeric powder)
1 teaspoon lal mirch powder (red chili powder)
1 teaspoon dhaniya powder (coriander powder)
1/2 teaspoon garam masala
Namak (salt) swad anusar (to taste)
Hare dhaniye ke patte (fresh coriander leaves), kata hua (chopped), sajane ke liye
For the stuffing:
2 tablespoon bhuni hui moongphali (roasted peanuts), thoda sa kuti hui (coarsely ground)
2 tablespoon nariyal ka grated (grated coconut)
2 tablespoon kata hua dhaniya (chopped coriander leaves)
1 teaspoon til (sesame seeds)
1/2 teaspoon saunf (fennel seeds)
1/2 teaspoon jeera (cumin seeds)
1/2 teaspoon lal mirch powder (red chili powder)
Namak (salt) swad anusar (to taste)

Baingan ko achhe se dho kar, har ek par lamba chhed banayein, dhyan rakhein ki poori tarah se naat (stem) wale hisse ko kat na jayein.
Ek bowl mein bhuni hui moongphali, grated nariyal, kata hua dhaniya, til, saunf, jeera, lal mirch powder aur namak ko mila kar stuffing taiyar karein.
Taiyar stuffing se har ek baingan ko bhar dein aur side mein rakhein.
Kata hua pyaaz ko dalein aur use golden brown hone tak saute karein.
Adrak-lehsun paste dalein aur ek minute tak saute karein, jab tak kaccha swad na rahe.
Kata hua tamatar, haldi powder, lal mirch powder, dhaniya powder, garam masala aur namak dalein. Achhe se milayein aur tab tak pakayein jab tak tamatar naram na ho jayein aur tel alag na ho jaye masale se.
Halka hath se baingan ko kadhai mein rakh dein aur masala se acche se coat karein.
Kadhai ko dhak kar dhimi aanch par 15-20 minute tak ya jab tak baingan naram na ho jayein, pakayein. Thoda-thoda der karke baingan ko palatkar pakayein, taki acchi tarah se pak jayein.
Jab baingan pake ho jayein, upar se taja kata hua hare dhaniye ke patte se sajayein.
Garam-garam roti ya chawal ke saath serve karein.
