- 2 Cans (15 oz each) gandules (pigeon peas), drained and rinsed
- 4 Cups chicken broth or water
- 1 onion, finely chopped
- 1 bell pepper, finely chopped

- 2 Tbsp tomato sauce
- 2 Tbsp achiote oil or olive oil
- 1 Tsp ground cumin
- 1 Tsp dried oregano
- Salt and pepper to taste
Instructions
- Heat the oil in a large pot over medium heat. If using pork or ham, brown it in the pot first, then remove and set aside.
- Sauté the onion, bell pepper, and garlic until softened, about 3-5 minutes.
- Add the rice to the pot and stir so that it could get mixed with oil and vegetables. Cook for another 2-3 minutes, stirring frequently.
- Stir in the tomato sauce, cumin, oregano, salt, and pepper. Add the gandules and cooked pork or ham back into the pot and mix well.
- Pour in the chicken broth or water and bring the mixture to a boil. Reduce the heat to low, cover, and simmer for about 20-25 minutes or until the rice is tender and the liquid is absorbed.
