Aloo ko chhilkar chote cubes mein kaat lein. Usi tarah shimla mirch ko beej nikal kar patle slices mein kaat lein.
Ek kadhai mein tel garam karein, medium aanch par. Usmein jeera aur hing dal dein. Kuch seconds tak tadke lene dein.
Kadhai mein chopped pyaaz dal kar translucent hone tak sauté karein.
Ginger-garlic paste dal kar ek minute tak pakayein, jab tak kachcha smell na rahe.
Ab kadhai mein aloo ke cubes dal kar achhe se mix karein. Lagbhag 5 minutes tak pakayein, thodi-thodi der mein hilaate rahein.
Haldi powder, dhaniya powder, lal mirch powder aur namak dal kar sabko achhe se mix karein, aloo ko masalon se achhe se coat kar dein.
Kadhai ko cover kar dein aur 8-10 minutes tak pakayein ya jab tak aloo adhe se pak na jayein. Thoda-thoda hilaate rahein, chipakne se bachane ke liye.
Jab aloo adhe se pak jayein, uske baad shimla mirch ko kadhai mein dal dein. Achhe se milayein aur aur 5 minutes tak pakayein ya jab tak shimla mirch naram na ho jaye.
Garam masala ko dish par sprinkle karein aur achhe se milayein.
Tajgi wale hara dhaniye se garnish karein.
Garam garam roti ya chawal ke saath serve karein.
