Matar Kachori ek prasiddh bharatiya snacks hai, jo maida se bane crispy aur chatpate kachori mein bhari hui matar filling ke saath tayar hoti hai. Yeh khasta aur mazedar mithai poori badi hi lokpriya hai aur bharatiya bhojan ka ek mahatvapurn hissa hai.

Matar Kachori banane ke liye sabse pehle maida ko tel aur namak ke saath guthkar aata tayyar karte hain. Is aate ko dhak kar thodi der ke liye rakhne se yeh naram ho jata hai. Isi samay filling bhi tayar ki jati hai, jismein ubale hue aloo aur hari matar ka mishran hota hai. Ismein pyaaz, adrak-lehsun ka paste aur masale daal kar chatpati filling tayar ki jati hai.

Aate se belkar chote-chote purya banaye jate hain aur unmein matar filling rakhi jati hai. Purya ko belkar gol shape mein tayar karte hain. Fir garam tel mein yeh kachori sekne ke liye rakhi jati hai, jisse woh crispy ho jayein. Sekne ke baad hara dhaniya se sajake matar kachori garam-garam serve ki jati hai.

Matar Kachori ka swad chatpata hota hai aur uska crispy texture aakarshan ka karan banta hai. Yeh dish bhojan ka ek mukhya hissa hai, jo chai ke saath ya snacks ke roop mein khaya jata hai. Matar Kachori ka tayari ka tarika prachin hai aur yeh logon ko swadisht aur mazedar anubhav pradaan karta hai.

INGRIDIENTS

NOMatar Kachori
1.For the Kachori Dough:
2 cup maida (all-purpose flour)
1/4 cup tel (oil)
Namak swad anusaar
Pani, zaroorat anusaar
2.For the Filling:
1 cup hari matar (green peas)
2 bade aloo (potatoes), ubale hue aur chote tukde
1 chhota pyaaz (small onion), bareek kata hua
1 chammach adrak-lehsun ka paste (ginger-garlic paste)
1/2 chammach haldi powder (turmeric powder)
1 chammach lal mirch powder (red chili powder)
1/2 chammach garam masala
Namak swad anusaar
2 chammach tel (oil)
Kata hua hara dhaniya (coriander leaves), garnishing ke liye

1.Maida mein tel aur namak milayein aur aate ka mishran tayyar karein. Thoda-thoda pani daalkar sakht aata guth lein.
2.Aate ko dhak kar 20-30 minutes ke liye rakh dein.
3.Is beech, filling ke liye, ek kadhai mein tel garam karein aur usmein pyaaz aur adrak-lehsun paste daal kar bhunein.
4.Ubale hue aloo aur hari matar daalein aur acchi tarah se milayein.
5.Ismein haldi powder, lal mirch powder, garam masala aur namak daalein aur acchi tarah se pakayein.
6.Tawe mein se aate ko lekar usse bel lein aur beli hui aate se chote-chote purya bana lein.
7.Purya mein filling rakhein aur aate se dhak kar gol shape mein bel lein.
8.Garam tel mein sev ya kachori daalein aur dheemi aanch par sunehre hone tak sek lein.
9.Hara dhaniya se sajayein aur garam-garam serve karein.
