Ye believe kiya jata hai ki Khaja pehle Jagannath Temple of Puri mein banaaya jaata tha as an offering to Lord Jagannath aur isme wheat flour, ghee, aur sugar use kiya jaata tha.

Mughal rulers of India ne bhi Khaja ko apna pasand banaya aur dish ko apne variations ke saath present kiya. British Raj period mein dish ko further refine kiya gaya aur ye sweet dish countrywide common ban gaya.

MAKING OF KHAJA Recipe in Hindi

In a mixing bowl, combine the all-purpose flour and semolina.एक मिक्सिंग बाउल में, मैदा और सूजी मिलाएं।
Add ghee and mix well until the mixture resembles breadcrumbs.घी डालें और अच्छी तरह मिलाएँ जब तक मिश्रण ब्रेडक्रंब जैसा न हो जाए।
Slowly add water and knead the dough until it becomes smooth and elastic.धीरे-धीरे पानी डालें और आटे को तब तक गूंदें जब तक यह चिकना और लोचदार न हो जाए।
Cover the dough and let it rest for 30 minutes..आटे को ढककर 30 मिनिट के लिए रख दीजिए.
Divide the dough into small balls.आटे को छोटी छोटी लोई में बांट लें।
Roll out each ball into a thin circle.प्रत्येक गेंद को एक पतले घेरे में बेल लें।
Heat oil in a deep pan for frying.एक गहरे पैन में तलने के लिए तेल गरम करें।
Fry the rolled dough circles in the hot oil until they turn golden brown.बेली हुई लोइयों को गरम तेल में गोल्डन ब्राउन होने तक तल लीजिए.
In a separate pan, add sugar and 1/2 cup of water and bring it to a boil.एक अलग पैन में चीनी और 1/2 कप पानी डालकर उबाल लें।
Add the fried dough circles to the sugar syrup and let them soak for a few minutesतले हुये आटे के गोलों को चाशनी में डालिये और कुछ मिनिट के लिये भीगने दीजिये.
Remove the khaja from the syrup and place them on a plate to cool.खाजा को चाशनी से निकाल कर प्लेट में ठंडा होने के लिये रख दीजिये.
Once cooled, the khaja is ready to be served.ठंडा होने के बाद खाजा परोसने के लिए तैयार है।
