Yeh dish moong dal ke crispy aur swadist vade ko namkeen aur chatpate kanji ke saath milakar tayaar ki jaati hai. Kanji Vada ki vidhi shuru hoti hai moong dal vade ko bhigo kar naram karke. Aise naram vade ko kanji mein milaya jaata hai, jisse vade kanji ke swad ko ache se absorb kar sakein. Kanji, jo ki sarson ke tel ka sanchit jal hai, usmein lal mirch powder aur namak milaya jaata hai, jisse kanji ka swad aur bhi adhik badh jaata hai.

Kanji Vada ka sabse mukhya tatva kanji hota hai, jo ki swad aur sehat dono ka dhyan rakhte hue tayar kiya jaata hai. Kanji ka swad thoda kadwa hota hai aur ismein sarson aur lal mirch ka swad paryaapt roop se milta hai.

Kanji Vada ko tayar karne ke baad use thoda thanda hone ke liye rakhna zaroori hai, taaki vade kanji ke swad ko ache se absorb kar sakein. Kata hua dhaniya patta se sajaye gaye yeh vade, khane ki drishti se bhi akarshan aur swad ke liye anmol hote hain.

1. 1 cup moong dal vada (split green gram fritters)
2. Namak swad anusaar
3. 4 cups kanji (fermented mustard-flavored water)
4. 1/2 chammach lal mirch powder (red chili powder)
5. Kata hua dhaniya patta (coriander leaves), garnishing ke liye

1.Moong dal vade ko thoda garam paani mein bhigo dein. Vade naram hone tak rakh dein.
2.Kanji ko aise hi thoda garam hone tak rakh dein.
3.Naram vado ko haath se thoda masal kar kanji mein dalein.
4.Namak aur lal mirch powder milayein aur ache se milayein.
5.Kanji Vada ko kuch ghante tak thanda hone ke liye rakh dein, taaki vade kanji ka swad ache se absorb kar sakein.
6.Kata hua dhaniya patta se sajayein aur garama-garam serve karein.
