Ingredients

  • 2 Cups Heavy cream
  • 5 Large Egg yolks
  • 1/2 Cup Granulated sugar
  • 1 Tsp Vanilla extract
  • 4-6 Tbsp Granulated sugar (for caramelizing)

Instructions

  • Preheat oven to 325°F (160°C).
  • In a saucepan, heat the heavy cream until it starts simmering. Remove from heat and set aside.
  • In a mixing bowl, whisk the egg yolks and sugar until well combined and slightly thickened.
  • Slowly pour the heated cream into the egg mixture while whisking continuously.
  • Stir in the vanilla extract.
  • Strain the mixture through a fine-mesh sieve to remove any lumps.
  • Divide the mixture among ramekins placed in a baking dish.
  • Pour hot water into the baking dish, about halfway up the sides of the ramekins.
  • Bake for 30-35 minutes until the edges are set but the center still jiggles slightly.
  • Remove from oven and let the ramekins cool in the water bath.
  • Refrigerate for at least 2 hours or until completely chilled.
  • Prior to serving, sprinkle a thin, even layer of granulated sugar over the custard.
  • Using a kitchen torch or under a broiler, caramelize the sugar until golden and crisp.
