Chole ek bahut famous North Indian dish hai, jo chickpeas se banta hai. Iss dish mein chickpeas ko spicy and tangy gravy mein pakaya jaata hai.

Ye Indian homes mein bahut common dish hai aur isse rice, naan bread aur other Indian breads ke saath khaya jaata hai.

Chole ki origin Indian subcontinent mein hai, jahan se chickpeas ko thousands of years se grow kiya jaata hai aur consume kiya jaata hai.

Ye dish Punjab region se originate hui hai, jo ab India aur Pakistan ke beech mein divided hai. Pehle ye dish simple thi jisme chickpeas, onions aur kuch basic spices use hote the, lekin ab ye dish bahut complex aur flavorful ho gayi hai with many regional variations.

Aaj kal, chole ke bahut saare different recipes hai, jisme alag-alag spices aur ingredients use hote hai.

Tea leaves / chai ki Patti ½ tspचाय की पत्ती / चाय की पत्ती ½ छोटा चम्मच
Chole masala 1 ½ tbspछोले मसाला 1 ½ बड़ा चम्मच
Kashmiri red chilli powder 1 tspकश्मीरी लाल मिर्च पाउडर 1 छोटा चम्मच
Dhania powder / Coriander powder ½ tspधनिया पाउडर / धनिया पाउडर ½ छोटा चम्मच
Jeera powder / Cumin powder ½ जीरा पाउडर / जीरा पाउडर ½ छोटा चम्मच
Black pepper / Kali mirch 4-5काली मिर्च / काली मिर्च 4-5
Cloves / Laung 2-3लौंग/लौंग 2-3
Cinnamon stick / dalchini 1”दालचीनी स्टिक/दालचीनी 1”
Bay leaves / tej patta 1तेज पत्ता / तेज पत्ता 1
Hing / Asafoetida pinchहींग चुटकी भर
Salt as per your tasteनमक अपने स्वादानुसार
Oil 1-2 tbspतेल 1-2 बड़े चम्मच

MAKING OF CHOLE SABJI

Put the soaked filtered water in the cooker as followed by the grated ginger.एक छोटा कपड़ा लें और उसमें चाय की पत्ती या उसके पत्ते डालकर पोटली बना लें और गांठ बांध लें।
Take a small cloth and make a bundle by putting tea leaves or its leaves in it and tie a knot.एक छोटा कपड़ा लें और उसमें चाय की पत्ती या उसके पत्ते डालकर पोटली बना लें और गांठ बांध लें।
Put salt as per taste in the cooker and close the cooker and cook till 8-10 whistlesकुकर में स्वादानुसार नमक डाल दीजिये और कुकर बन्द कर दीजिये और 8-10 सीटी आने तक पका लीजिये
After 8-10 whistles, check whether the Chole are evenly roasted or not.8-10 सीटी आने के बाद चैक कीजिए कि छोले एक जैसे सिक गए हैं या नहीं।
Now remove the bundle from it and take out the Chole in a vessel.अब इसमें से पोटली निकाल लें और छोले को एक बर्तन में निकाल लें.
Put 2 Table spoons of oil in a pan and after it gets heated, add bay leaves, cloves, cinnamon, cinnamon stick and black pepper and cook the lentils for 30 seconds.कढ़ाई में 2 टेबल स्पून तेल डालिये और गरम होने पर इसमें तेजपत्ता, लौंग, दालचीनी, दाल चीनी और काली मिर्च डाल कर दाल को 30 सेकण्ड्स के लिये पका लीजिये.
Now after 30 seconds add asafoetida and kashmiri red chili.अब 30 सेकंड के बाद हींग और कश्मीरी लाल मिर्च डालें।
And now put onion paste in it and cook for 3-4 minutes till it gets cooked completely.और अब इसमें प्याज का पेस्ट डालकर 3-4 मिनट तक पूरी तरह पकने तक पकाएं.
Now after the onion is fully cooked, add tomato paste to it.अब प्याज के पूरी तरह से पकने के बाद इसमें टमाटर का पेस्ट डाल दें.
Now cook Chole Masala, Salt, Coriander Powder, Cumin Powder, Dal for 3-4 minutes till it gets cooked completely.अब छोले मसाला, नमक, धनिया पाउडर, जीरा पाउडर, दाल को 3-4 मिनिट तक पूरी तरह पकने तक पका लीजिये.
Now put whole star in itअब इसमें छोले दाल के परके पूरी तारा पकने दे
Use fresh coriander dal for 5 minutes.5 मिनट के लिए ताजी धनिया दाल का प्रयोग करें।
And now chickpea curry is readyऔर अब चने की सब्जी बनकर तैयार है
Garnish with fresh coriander and serve hotताज़ा धनिया से सजाकर गरमागरम परोसें
