2Cupslong-grain rice
2Cans(15 oz each) gandules (pigeon peas), drained and rinsed
4Cupschicken broth or water
1onion, finely chopped
1bell pepper, finely chopped
3Clovegarlic, minced
2Tbsptomato sauce
2Tbspachiote oil or olive oil
1Tspground cumin
1Tspdried oregano
Salt and pepper to taste
Instructions
Heat the oil in a large pot over medium heat. If using pork or ham, brown it in the pot first, then remove and set aside.
Sauté the onion, bell pepper, and garlic until softened, about 3-5 minutes.
Add the rice to the pot and stir so that it could get mixed with oil and vegetables. Cook for another 2-3 minutes, stirring frequently.
Stir in the tomato sauce, cumin, oregano, salt, and pepper. Add the gandules and cooked pork or ham back into the pot and mix well.
Pour in the chicken broth or water and bring the mixture to a boil. Reduce the heat to low, cover, and simmer for about 20-25 minutes or until the rice is tender and the liquid is absorbed.
Once cooked, fluff the rice with a fork and let it sit covered for a few minutes before serving.
