Ingredients

  • 2 Cups long-grain rice
  • 2 Cans (15 oz each) gandules (pigeon peas), drained and rinsed
  • 4 Cups chicken broth or water
  • 1 onion, finely chopped
  • 1 bell pepper, finely chopped
  • 3 Clove garlic, minced
  • 2 Tbsp tomato sauce
  • 2 Tbsp achiote oil or olive oil
  • 1 Tsp ground cumin
  • 1 Tsp dried oregano
  • Salt and pepper to taste

Instructions

  • Heat the oil in a large pot over medium heat. If using pork or ham, brown it in the pot first, then remove and set aside.
  • Sauté the onion, bell pepper, and garlic until softened, about 3-5 minutes.
  • Add the rice to the pot and stir so that it could get mixed with oil and vegetables. Cook for another 2-3 minutes, stirring frequently.
  • Stir in the tomato sauce, cumin, oregano, salt, and pepper. Add the gandules and cooked pork or ham back into the pot and mix well.
  • Pour in the chicken broth or water and bring the mixture to a boil. Reduce the heat to low, cover, and simmer for about 20-25 minutes or until the rice is tender and the liquid is absorbed.
  • Once cooked, fluff the rice with a fork and let it sit covered for a few minutes before serving.
